Playing It Cool With Summer’s Ice Lollies

Frozen Treats

Frozen treats come to the top of everyone’s wish list during summer. There should be a frozen treat for everyone, whether you are a kid or an adult, looking for a healthy treat or an indulgent one. These are some of VIDA’s favourits:

ROASTED STRAWBERRIES AND CREAM

ROASTED STRAWBERRIES AND CREAM

Ingredients:

  • 1 punnet fresh strawberries
  • 4 tbsp balsamic vinegar
  • 1 tbsp maple syrup
  • ½ tsp salt
  • 2 tubs fresh cream

Method:

  1. Preheat the oven to 180C.
  2. Halve the strawberries an place in a single layer on a baking tray lined with baking paper.
  3. Drizzle over the balsamic vinegar and roast until soft and fragrant (approx. 20 mins).
  4. Allow to cool in the pan for 10 mins before transferring to a separate bowl.
  5. Add the maple syrup and the salt and mash with a fork leaving some chunks of fruit.
  6. Allow to cool to room temperature.
  7. Place a tablespoon of fruit into the bottom of the mould.
  8. Layer with fresh cream and more fruit.
  9. Freeze until set (approx) 4 hours.
  10. To remove from the mould, place in warm water for 5 seconds before sliding out of the mould.
  11. Serve immediately.

Note: Make this vegan by substituting the fresh cream for coconut cream

NUTELLA AND OREO POPSICLES

NUTELLA AND OREO POPSICLES

Ingredients:

  • 5 tbsp Nutella
  • 8 Oreos
  • 2 tubs fresh cream

Method:

  1. Place half a tablespoon of Nutella into the bottom of a 5 plastic cups.
  2. Crush the Oreos and place ½ tbsp Oreos over the Nutella.
  3. Top with fresh cream and freeze for 30 mins – 1 hour.
  4. Place the remaining Nutella on the top and top with remaining Oreo   crumbs.
  5. Insert a stick into the popsicle and freeze until set (approx. 3 more hours).
  6. To remove from the mould place in warm water for 5 seconds and slide out of the plastic cup.
  7. Serve immediately.

Note: May cause fights over the last ice lolly

GIN AND TONIC + FRUIT AND COCONUT WATER ICE LOLLIES

GIN AND TONIC + FRUIT AND COCONUT WATER ICE LOLLIES

GIN AND TONIC

Ingredients:

  • 4 shots gin
  • Tonic water
  • Cucumber slices
  • Mint leaves

Method:

  1. Place half a shot of gun into each mould.
  2. Add the cucumber slices and mint.
  3. Top with tonic water.
  4. Insert a stick into the ice lolly and freeze until set (approx. 4 hours).
  5. To remove from the mould place in warm water for 5 seconds and slide out of the mould.
  6. Serve immediately.

Note: Strictly for grown ups

FRUIT AND COCONUT WATER

FRUIT AND COCONUT WATER

Ingredients:

  • Fresh fruit of your choice
  • Strawberries
  • Blueberries
  • Mango
  • Mint
  • Red currants
  • Kiwi
  • Coconut water

Method:

  1. Chop up a selection of your favourite fruit. Feel free to add or leave out anything on the list.
  2. Place into the ice lolly mould and top with coconut water.
  3. Insert a stick into the ice lolly and freeze until set (approx. 4 hours).
  4. To remove from the mould place in warm water for 5 seconds and slide out of the mould.
  5. Serve immediately.
